Ras malai often called Rasaw malai in Odisha or rossomalai in West Bengal, is an Indian dessert. It has been described as “a rich cheesecake without a crust”. It is considered to be a variation of the rasgulla in which syrup is replaced with thick milk. Ras malai consists of flattened balls of cheese soaked in malai (clotted cream). Milk is boiled and lime juice is used to split it. then the milk solids are drained, cooled and kneaded into small balls. after that these balls are cooked in hot water with a bit of rose water added. It is made by deep-frying maida flour all-purpose flour batter in circular shapes, which are then soaked in sugar syrup. This dessert can be served warm or cold. They have a somewhat chewy texture or lime juice is sometimes added to the syrup, as well as rose water. Jalebi is often accompanied by curd or rabri (North India) along with optional other flavours.

It is a traditional royal dessert that has been passed on proudly from generation to generation. sahi tukra is a bread pudding Indian sweet of fried bread slices soaked in hot milk with spices, enriched with saffron and cardamom. also known as Double ka meetha of Hyderabad, Telangana. It is popular in Hyderabadi cuisine, served at weddings and parties. The dish is similar to Shahi Tukra. It is particularly prepared during the festive month of Ramadan and on Eid. The recipe uses bread, condensed milk, and dry fruits.
